Stuffed Eggplant with Lamb and Pinenuts

I love recipes that make great left overs.  This is one of them! Delicious warm or cold and full of flavor.

I used Ottolenghi’s Jerusalem cookbook, but the link below is pretty much the exact same recipe.  Not gonna lie, it’s a little involved, but well worth it.  Enjoy!

Here is the recipe from Food & Wine.

SIBO modifications:

  • Sub 2 bunches of green onion (green part only) for onion
  • Sub honey for sugar (1:1 substitution ratio
  • Strict SIBO – no Tamarind, sub vinegar and a little honey

A note about Tamarind:  I’m not sure of the FODMAP breakdown of tamarind paste or powder, so my general rule is if I don’t know I don’t use it.  However, in this particular case (because it was a special occasion), I used a little tamarind powder (1/2 teaspoon) with a little white vinegar (1/2 teaspoon).  I didn’t have a reaction, so that’s awesome!
